Monitor foods in cooler drawer under chargrill. Raw pattied hamburgers that were found to be in the temperature danger zone are in a lexan pan with a lid, inside the cooler drawer. The patties were prepared the previous day. The cooler thermometer on the exterior is reading 39 degrees F. Owner is unsure why the pattied hamburger is not holding a temperature below 41 degrees F. Employee's certified food handler certificate is current. |

OWNER STATED THEY HAVE NOT HAD ANY ILL EMPLOYEES OR REPORTED ILLNESSES WITHIN THE PAST TWO WEEKS. THE ESTABLISHMENT HAS A CERTIFIED FOOD HANDLER ON STAFF. THE FRESH HAMBURGER IS COOKED TO MEDIUM/MEDIUM WELL . (CONSUMER ADVISORY IS ON THE MENU) THE BRICKYARD BURGER IS THEN PLACED IN FLOUR, EGG WASH AND DEEP FRIED. THE EGGS IN THE EGG WASH IS PASTEURIZED LIQUID EGG. FRESH BACON IS DEEP FRIED PRIOR TO PLACING ON THE BURGER. PRODUCE IS PURCHASED FROM GFS. LETTUCE IS PREWASHED AND IS WASHED AGAIN IN THE 2 BAY SINK. TOMATOES ARE WHOLE AND ARE SILCED IN HOUSE. NO CROSS CONTAMINATION WITH RAW/READY TO EAT FOODS OR WITH BARE HAND CONTACT, OR IMPROPER CHEMICAL STORAGE. THE ESTABLISHMENT USES CHLORINE TO SANITIZE WITH. THE PROPER CONCENTRATION OF BOTH THE IN PLACE SANITIZER AND DISHMACHINE WAS AT 50 PPM. OBSERVED PROPER HANDWASHING. OBSERVED FOOD HANDLING. NO BARE HAND CONTACT WITH READY TO EAT FOODS. COOLER IS HOLDING AT APPROXIMATELY 40 DEGREES F WHERE RAW HAMBURGER IS STORED. CHEESE CURDS ARE A FROZEN PRODUCT THAT IS PLACED IN THE FRYER. SPITFIRE RANCH IS MADE IN HOUSE AND IS HELD UNDER REFRIGERATION. IT CONSISTS OF CONDIMENTS AND DRESSING. COMPLAINANT CALLED ESTABLISHMENT BUT DID NOT WAIT FOR MANAGER TO TAKE PHONE CALL BEFORE HANGING UP, OWNER STATED. NO SICK OR ABSENT EMPLOYEES AT THIS TIME.IT IS UNDETERMINED IF THE CUSTOMER BECAME ILL FROM CONSUMING FOOD FROM THE ESTABLISHMENT. |

THE KITCHEN MANAGER HOLDS THE CERTIFIED FOOD HANDLER CERTIFICATE FOR THE ESTABLISHMENT AND IS EDUCATED IN FOOD SAFETY. OBSERVED KITCHEN MANAGER WEARING A HAIR RESTRAINT WHILE HANDLING FOOD. NO BARE HAND CONTACT WAS OBSERVED. NO CROSS CONTAMINATION WAS OBSERVED. ALL RAW ANIMAL FOODS ARE STORED ON THE BOTTOM SHELF OF THE COOLER AND THE BOTTOM COOLER DRAWER, UNDER REFRIGERATION. ALL READY TO EAT FOODS ARE STORED ON UPPER SHELVING IN COOLER, TO AVOID CROSS CONTAMINATION. COOLERS ARE HOLDING 34-38 DEGREES F. ALL POTENTIALLY HAZARDOUS FOODS IN THE COOLERS WERE FOUND TO BE HOLDING BELOW 41 DEGREES F. FOODS IN REACH IN COOLER ARE DATE MARKED AS REQUIRED. OBSERVED HAND WASHING BY KITCHEN MANAGER WHILE PREPARING FOOD. ALL HAND SINKS ARE STOCKED WITH SOAP, PAPER TOWELS AND PROVIDING HOT AND COLD WATER. PEST CONTROL SERVICED THE ESTABLISHMENT ON DECEMBER 6, 2019. NO PEST ISSUES AT THIS TIME. THE COMPLAINT IS UNDETERMINED. NO OBSERVATION OF UNSANITARY CONDITIONS/CLEANLINESS ISSUES, PESTS, OR FOOD SAFETY CONCERNS. |

An investigation was conducted regarding complaint of rodent dropping in women’s bathroom, floor being sticky and dining room furniture being soiled. Spoke with manager and she stated, “Floors in dining area are cleaned daily and mopped every other day or more frequently as needed. The kitchen floors are deck scrubbed every other day. The bathroom floors and bathrooms are cleaned every night. The dining room tables are cleaned between customers and nightly. Pest control was last at the facility on August 11, 2023. Company has been contacted to send report to owner. No other complaints have been received in the last few weeks.” No signs of mouse dropping in women’s bathroom, kitchen areas, storage areas, bar area, ice cream area or dining room at time of inspection. The floors through out appear clean and are not slick at time of inspection. The dining area tables are clean at time of inspection. No violations at time of inspection. |
