A routine inspection was performed on this cart. The cart is operating without a license. The owner states, the other cart that is licensed was in an accident preventing him to use it. The grill that was originally approved to be on the other cart, was sitting on top on of a stand next to the cart. The grill was not attached to the cart at all. The sink was stocked properly with hot and cold water provided. After the owner made new sanitizing water, it then reached 100 ppm bleach. The food items properly hot held at 156 deg f. There were 4 coolers observed. 2 of which had drinks stored and the other 2 had the food items. Food items that must remain cold were housed under ice and reached 40 deg f and lower. The owner will come to the office to pay the $500 citation along with the fee for the cart. |

ROUTINE INSPECTION. HOT DOG CART SETS UP DAILY 10:30-6:00 PM IN FRONT OF DOLLAR GENERAL ON 16TH AND EMERSON AVENUE. SET UP INCLUDES SMALL HOT DOG CART, 2 LARGE COOLERS WITH SODAS, 2 LARGE COOLERS WITH BACK UP HOT DOGS, SHREDDED CHEESE, PICO DE GALLO, GARDINARE, BANANA PEPPERS, BACON BITS, ETC. ALL ITEMS IN COOLERS TEMP MEASURED 41 DEG F. ICE IS FILLED TWICE DAILY. NEXT TO HOT DOG CART IS 3 BURNER PROPANE STOVE WITH HEATED HOT DOGS AND CHILI SAUCE. PIC STATES THAT EXTRA BURNERS ARE ONLY USED DURING LUNCH TIME.

HOT DOG CART MENU AND EQUIPMENT HAS OUTGROWN WHAT IS APPROVED FOR A LIMITED FOOD OPERATION.
ALL FOOD SHALL BE STORE BOUGHT, COMMERCIALLY PREPARED RTE FOODS THAT ARE SERVED FOR DAY OF SERVICE.
REDUCE MENU AND REMOVE EQUIPMENT THAT IS NOT PART OF HOT DOG CART.
