Soft serve/ice cream machine not in service today. Vent hood sticker above cook line is up to date - due to be serviced again in October. ANSUL system was serviced in April of this year. Quat sani at the three-bay at bar measured at approx 150ppm. Quat sani at three-bay in back of kitchen measured at approx 200ppm. Kitchen, equipment, and utensils are clean and organized. One low-boy reach-in cooler unit not in use.. Walk-in cooler had an ambient air temperature of approx 34*F - 36*F. Observed proper thawing of frozen meats in the walk-in as well as proper storage of raw meats. Prepped containers of food had appropriate date marking stickers. Reach-in cooler by the back door had an ambient air temp of approx 40*F. Observed manager properly washing hands when changing tasks and before putting on gloves! NOTE: Employee who was the certified food handler no longer works at the store - manager stated he will be scheduled to take the ServSafe exam next week and that another manager within the store is already certified. Routine 2021-11-30 In Violation Vent hood in kitchen is serviced by Greasebusters - manager stated they came about two weeks ago, but the date has rubbed off the sticker, but hood and filters appear clean. There is a back kitchen area with the three-bay sink, and a downstairs basement area. There is also another basement area that is accessed from the dining room - it is storage for catering and equipment. Behind the dining room area, there is also a walk-in freezer, a two door reach-in cooler (temp'd at 40*F), dry storage shelving, and the dumpster area. Along the main cook line: inside prep-top, sliced cucumbers temp'd at 40.5*F. There are two cooler drawers under the flat top - chicken temp'd at 37*F. In the hot holding steam well, cooked onions temp'd at 150*F. There's a small three-bay for the bar/keg area - water temp'd at 113*F. Quat sanitizer tested well. In the back kitchen area, there is a large three-bay sink (water temp'd at 124*F) as well as an ice machine, walk-in cooler (temp'd between 36*F - 38*F). All raw meat inside was stored correctly and prepped containers of veggies/food were all date marked with days of the week stickers. Went over date marking system with manager - sticker goes on the day the food is prepped and manager accurately described 7 day time frame for storage. Also went over sources of food (US Foods, Piazza, Fisher Farms) - all meat comes in raw except for chicken/duck - manager accurately went over thawing process with inspector (keeping in walk-in or if necessary, running under cool water in sink). Facility uses Ecolab pest control - no issues noticed during inspection. Also checked restrooms and mop sink. Violations Report
