1. Establishment recently did renovation on their counter/reach-in cooler along prep line. The gap between countertop and front of reach-in cooler with insulation exposed. Seal the front of the unit properly.
10/1/20: Foil and and heavy duty tape covering exposed portion under counter. Replace with a permanent material such as PVC board or wood (note: wood needs to be properly sealed and caulked) |

1. Prepped salads in the reach-in along make line cold holding at 45*F. Turn down the unit to hold items at 41* or below.
10/1/20: Reach in still cold holding too high - owner stated they are going to stop using the cooler and get a new one. All food inside he moved to the other reach-in. Corrected on site.
NOTE: Cooler needs to be removed from the kitchen if it will no longer be used. |
